Classic North African CousCous
CousCous with chicken, (you can add lamb if you wish) and merguez, a spicy lamb and beef sausage along with a mix of seasonal and Mediterranean vegetables cooked in a rich tomato sauce and served with homemade harissa, a hot chilli sauce which your guests can add to their taste.
This is a true recipe from Texas and not for the feint hearted. It is essentially the finest stewing beef, diced and slowly cooked with kidney beans in a tomato based sauce with a clever mix of spices and herbs but most importantly with three different chillies. An immensely satisfying dish. Served with rice.
A foot long, spicy Merguez saucisse served in a baguette covered in our own chilli beef and topped with sliced jalapeno peppers.
Aloo Chole, (Potato and Chickpea Curry)
A delicious and rich vegetarian curry based around chickpeas and potatoes. Fresh green chillies are used to give this curry a little spice and no fewer than 8 different spices are blended to create an authentic flavour. Served with rice.
