A.O.P. From the Haute Provence this is a memorable semi hard goats cheese delicately wrapped in “chataigner”, (a chestnut leaf) that has been soaked in white wine from which the cheese takes its distinctive taste. When unwrapped there can be a light blue mould underneath the leaf but this is perfectly edible.

For pairing Banon is excellent with a dessert wine, a Chenin Blanc or a strong red such as a good Bordeaux.
