Fourgerous comes from the Ile de France just south of Paris. The cheese is a member of the Brie family and the aroma is unmistakably Brie though the taste is much distinctive and artisanal. Fourgerous is matured for a month in deliberately damp cellars and dressed with a miniature fern leaf which makes it an attractive addition to any cheese board. Excellent with a good Beaujolais.
